Founded by Adrienne Walker, BlueHenry produces all-natural dehydrated fruits, specialty sugars, salts, and cocktail garnishes designed for hospitality professionals and home entertainers alike. What began as a solution to improve beverage presentation has evolved into a broader mission centered on environmental responsibility and community impact.

“We believe sustainability should be practical – just as we believe cocktail crafting should be,” says founder Adrienne Walker. “Practicing sustainability should help businesses operate better, reduce waste naturally, and make thoughtful choices easier — not harder.”


Extending the Life of Fresh Ingredients

One of BlueHenry’s most significant sustainability impacts begins with its core product: dehydrated fruit garnishes.

Fresh citrus garnishes are among the most wasted ingredients in bars, cafés, and restaurants. Cut fruit oxidizes quickly, must be refrigerated, and is often discarded at the end of service — even when unused.

BlueHenry’s dehydration process transforms fresh fruit into shelf-stable garnishes with a shelf life of up to one year, dramatically reducing spoilage.

By removing moisture while preserving flavor, color, and aroma, dehydration helps:

  • Extend usable life without artificial preservatives
  • Reduce refrigeration needs and energy use associated with fresh produce

“Our products help customers move away from a disposable garnish model,” Walker explains. “That’s where sustainability and efficiency meet. A single dehydrated slice replaces countless fresh cuts that might otherwise be thrown away.”

Thoughtful Production, Minimal Waste

BlueHenry’s production philosophy centers on maximizing ingredient use and minimizing unnecessary waste throughout the manufacturing process.

Fruit preparation and dehydration are designed to:

  • Use consistent slicing to reduce trim loss
  • Use batch efficiency to conserve energy 
  • Create shelf-stable products that avoid spoilage during shipping and in storage 

Whenever possible, we also prioritize reuse and recycling within our operations. Pallets are reused across production cycles, and cardboard materials, slip sheets, and cut sheets are repurposed to reduce packaging waste before recycling streams are utilized. Even small byproducts are thoughtfully reconsidered — unused fruit shards created during the dehydration process are incorporated into other products, such as pineapple flakes used in BlueHenry’s specialty rimmer blends, ensuring more of each fruit is fully utilized.

Because dehydrated products are lightweight and compact, transportation emissions are also reduced compared to shipping fresh fruit that contains significant water weight.

BlueHenry’s sustainability philosophy extends beyond ingredients into how products are used.

Specialty sugars and salts are packaged in shaker-style tubes designed for intentional portioning. Instead of dipping a wet glass in excess product, customers can shake out exactly the amount needed for a beverage rim — from cocktails and mocktails to teas, café beverages, and even desserts. This packaging design helps reduce overuse and product waste behind the bar or in cafés. These operational choices reflect BlueHenry’s belief that sustainability should exist throughout the entire product lifecycle – from production to packaging and beyond.


Sustainable Packaging with Measurable Impact

BlueHenry’s commitment to sustainability continues beyond the product itself and into packaging decisions – ensuring that sustainable cocktail garnishes are supported by equally responsible materials. 

By choosing FSC-certified packaging, BlueHenry has supported responsible forest management and reduced the carbon footprint of its packaging. Since our December 2024 transition, our work has had the environmental equivalency of:  

  • 1,900 passenger vehicle miles avoided 
  • 0.85 metric tons of coal not burned 
  • 30 tree seedlings grown for 10 years 

In addition, all BlueHenry dehydrated fruit is packaged in resealable bags, helping extend product freshness after opening and reducing unnecessary spoilage. These resealable bags also encourage reuse, allowing packaging to remain in circulation longer rather than being discarded immediately. BlueHenry regularly recommends these value-added packaging solutions to clients seeking custom or private-label programs that prioritize both functionality and sustainability.

FSC® certification ensures that materials originate from responsibly managed forests that protect biodiversity, uphold worker and Indigenous rights, and prevent illegal logging.

“Sustainable packaging is one of those choices customers may never see directly,” says Walker, “but it reflects our responsibility to consider the entire lifecycle of our products.”

For BlueHenry, sustainability also extends beyond environmental impact to include strengthening communities and improving access to food.


Supporting Communities and Equitable Food Systems

BlueHenry views sustainability as both environmental and social – supporting organizations that address food waste, nutrition access, and equitable food systems.

The company volunteers with organizations such as Brighter Bites and Nourishing Hope, helping recover and distribute nutritious food that might otherwise go to waste.

“Working with Nourishing Hope is incredibly rewarding,” says Brian Welburn, Director of Brand Strategy at BlueHenry. “You see how much perfectly good food can be rescued and redirected to families in our community who need it most.”

Founder Adrienne Walker also serves as a board member of The Capital Market, an initiative focused on improving access to fresh foods while supporting local entrepreneurs and equitable food systems.

“Sustainability includes who has access to healthy food and opportunity,” Walker says. “Strong communities are part of a sustainable future.”
